Meal Prep – Waffles (3 ways)

One of my favourite meal prep recipes are waffles. They are easy to make in bulk, sit well in the fridge and are great to freeze. They are also so versatile.

Basic waffles recipe:

  • 2 cups all purpose flour
  • 2 tbsp sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1.5 cups warm milk
  • 6 tbsp melted butter
  • 1 tsp vanilla extract
  1. Preheat your waffle iron.
  2. In a large bowl combine the flour, sugar, baking powder and salt and whisk to combine.
  3. In a separate small bowl whisk the eggs and stir in the warm milk, melted butter and vanilla extract. Pour the wet ingredients into the dry and whisk until blended.
  4. Ladle the batter into the preheated waffle iron and cook until the waffles are golden brown and crisp. Serve immediately or lay on a cooling rack until cool. Store in zip close bags in freezer or prep 4 days and place in the fridge.

Need some ideas for toppings:


  • 1 banana chopped
  • 1 small snack pot of toffee yoghurt
  • 2 tbsp maple syrup

Berry Almond

  • 1/2 cup blueberry pie fillinf
  • 1 tbsp sliced almonds
  • 2 tbsp evaporated milk

Apple Peanut Butter

  • 1/2 apple, sliced
  • 2 tbsp peanut butter
  • 2 tbsp maple syrup


When it comes to breakfast I always take the time to sit down and enjoy it. I could never be a quick cereal or toast eater. I love my food and taking time in the mornings sets me up for the day.

I am currently addicted to the berry almond waffles and have eaten them twice this week already. If you have any ideas on other toppings let me know.
